Jello Peach Pound Cake

Everyone loves the flavor of ripe summer peaches. Using jello in this recipe, you get the flavor of peaches in a delicious cake. You add mashed peaches in the cake and in the icing to get that lovely peach texture in this dessert. This is a wonderful dessert to make for a family gathering or other special occasion. It is super easy, but it really delivers on flavor. Once you have tried it, it will fast become a family favorite.

You can use fresh or canned peaches for this recipe. If you use fresh ones, choose some that are on the softer side. It is up to you if you prefer cling or freestone peaches. They both offer that great peach flavor that we all love and adore. When you choose fresh peaches at the market, smell the peaches. A ripe peach should have that wonderful peachy smell. It should not have any bruises and have a soft covering of fuzz. Do not squeeze peaches or you will bruise them. Just clutch the fruit firmly enough to feel that slight give in the flesh. The skin should be colored with yellows, oranges and reds; no green. You want a peach that still tastes fresh but is soft enough to mash without leaving hard pieces.

You will find fresh peaches are easier to peel if you blanch them in hot water for a minute or two first. The skin loosens and just pulls off. This will make preparing fresh peaches easier for your cake. If you do not want to go to all that work, just get a can of peaches. They taste great and all you need to do is mash them with a fork for the recipe.

When your dessert is done, serve it with style. Cut each slice of your pound cake and lay it on its own plate. You can garnish the slice with a dollop of ice cream with a slice of peach or perhaps a little sprig of mint for color. If you really like peaches, serve it with peach ice cream. Recipe for Peach Pound Cake

This is a perfect dessert to make for a summer party.

What You Need

1 box yellow cake mix 1 cup oil 4 eggs 1 small box peach flavored jello 1 Tablespoon lemon juice plus enough water to make 1/2 cup liquid 1/2 cup mashed peaches

Icing

2 cups powdered sugar 1/2 cup mashed peaches 1 Tablespoon lemon juice

How to Make It

Mix the cake mix, oil, eggs, jello, liquid and mashed peaches together. Pour into a baking pan and bake at 325 degrees F for 45 minutes or until a toothpick comes out clean.

Mix the icing ingredients together.

Pour icing over the cake while warm, but not hot.

Serve immediately.
