These colorful desserts will please everyone at the table. Layers of bright orange and yellow are interspersed with layers of cake and whipped cream. This is a light, fluffy dessert that does not pack a lot of calories. It is simple to make and it looks impressive when you set them in front of your family or friends. What more could you ask for in a dessert? Have some fun with it. Pick up some attractive glassware at the dollar store if you do not have any handy. Clear works best so you can really show off the colors and layers. Every bite will be different as you dip your spoon into the glass.
This is a kid friendly recipe. Let them help you in the kitchen when you are filling up the layers in the parfait glasses. They will have a grand time putting in the cubes of cake and Jello. They will have fun eating it, too. They will love the bite sized bits of cake and Jello sandwiched between the creamy whipped topping. You may want to stock up on extra cherries; kids usually love the cherry on top. Let them try some different flavors if they wish; this is a colorful dessert that should make the most of its visual impact! Since it is so light, it is perfect after a heavier meal or for anyone watching their diet. It makes a nice change from heavier, richer desserts.
JELLO
Make this into an instant holiday dessert by changing the type of Jello you use. Try red and green for Christmas, pink and blue for baby showers, yellow and pink for Easter, and so on. The yellow and orange in this recipe works well for spring, summer, or Thanksgiving. You are limited only by your imagination and the colors available for Jello. You can use real whipped cream if the parfaits will be eaten immediately, but frozen whipped topping works well. Let it thaw completely before you use it to get the right texture. If you use real whipped cream, you may want to wait until just before serving to assemble the dessert. You can do this ahead of time with the whipped topping.
