Strawberry and Rhubarb Cobbler Recipe
What you will need:
1 1/2 cups flour
1 teaspoon baking powder
1/2 stick plus 2 tablespoons butter
1 beaten egg
3 cups chopped rhubarb
2 tablespoons milk
1/2 teaspoon salt
1 cup sugar
3 oz package strawberry jello
How to make it:
Preheat the oven to 350 degrees F. Cut 2 tablespoons of butter into 1 cup of the flour until you have a mixture like fine breadcrumbs. Add the milk, eggs, salt, and baking powder and make a soft dough.
Press it into an 8 x 8 inch pan, pressing the dough up the pan sides. Put the rhubarb in the bottom and sprinkle the jello powder over the top.
Combine the rest of the flour with the rest of the butter and the sugar to make the topping. Sprinkle this over the jello powder and bake for about 30 minutes or until the rhubarb is soft.
